Well, I needed to update my electrical stuff in order to buy a new electric stove, so I could have bought about 3 gas stoves with the money I spent to make the electric one possible. I definitely prefer cooking on a gas stove, but my brother, who founded a local environmental organization, steered me towards an electric one, even as he warned that the effect would be minimal. If I’d known the science was bad, I wouldn’t have bothered with all that, of course, but at least the electric stove glass cook top is super easy to clean.

Maybe there is hype about gas stoves. I still don’t know. The comments about gas conversion seemed very off the cuff. As a former gas cooktop user, I was also skeptical. But my husband wanted induction. Inductions are about three times more efficient than gas stoves. They heat pans faster and there’s zero combustion even if you don’t believe that gas reduces the indoor air quality. Induction is comprable to gas or better and is way easier to clean.
